Pepper Steak
Makes 6 servings
Ingredients:
1 lb. tenderloin tips
1 clove garlic, crushed
1 tsp. ground ginger
1 tsp. salt
1/2 tsp. pepper
2 TBSP. corn oil
3 large sweet green peppers, halved, cored, seeded and cut into strips
2 large onions, thinly sliced
1/2 tsp. sugar
3/4 cup beef broth
1/4 cup soy sauce
6 oz. water chestnuts, sliced (optional)
1 TBSP. corn starch, dissolved into 1/4 cup cold water
4 green onions, cut into 1/2" pieces
1 cup sliced mushrooms (optional)
1 cup diced tomatoes (optional)
Cooking Instructions:
- Saute garlic, ginger, salt & pepper in oil in skillet until garlic is golden
- Add steak slices, brown lightly about 2 minutes
- Remove meat
- Add green pepper, onions and mushrooms; cook 3 minutes
- Return meat to skillet along wth sugar, broth, soy sauce, water chestnuts, cornstarch dissolved in water, green onions and tomatoes
- Simmer about 2 minutes or until sauce thickens
- Serve over hot cooked rice
