New York Steaks with Apple Horseradish Relish
- 2 (16oz) Lindauer Family Farms Premium New York Steaks
- 2 tbsp prepared horseradish drained
- 1 tbsp, plus 2 tsp apple cider vinegar
- 1 tbsp fresh lemon juice
- 1 tbsp maple syrup
- salt and pepper
- 1 golden del apple
- 1 granny smith apple
- 1 tbsp veggie oil
- 2 tbsp butter
- Fresh Thyme
Preheat oven to 450 degrees.
In medium bowl combine horseradish, vinegar, lemon juice, 1/2 teaspoon each of salt and pepper.
Grate the apples and add into the horseradish mixture. Set aside.
Heat oven proof skillet on high. Pat room temp steaks dry. Season with salt and pepper. Add oil to pan, when oil is almost smoking add the steaks to the hot oil. Cook 2 minutes, flip and cook for 1 more minute.
Transfer to lowest rack and roast in oven for 3 to 4 minutes depending on thickness of steaks. Remove from oven.
Carefully add butter and thyme to skillet, baste steaks then return to oven and roast for 2-3 more minutes for med-rare or until desired doneness.
Remove pan from oven, transfer steaks to cutting board and allow to rest for 5 minutes. Top steaks with steak juices and with the apple relish.
Serve!
