Fresh Basil Meatloaf
1 lb premium ground beef or round
3/4 cup fresh basil
3/4 cup chopped onion
1 cup seasoned breadcrumbs
1/2 cup ketchup
1/2 cup sun-dried tomatoes (packed without oil)
1/2 cup sharp provolone cheese (shredded)
2 large egg whites
2 minced garlic cloves
1. Combine all ingredients in a bowl and mix well.
2. Shape into a 9" x 5" loaf pan, coated with cooking spray.
3. Top with additional ketchup over the surface.
4. Bake at 350 degrees for 1 hour.
