Aunt Jodi's Chili
Ingredients:
1 chopped onion
1 Tbsp. vegetable oil
2 lbs. premium ground beef
2 large cans tomato sauce
2 medium cans of diced tomatoes
2 cans of Ro-tel brand diced tomatoes and peppers. (use peference of how hot a Ro-Tel you use)
2 large cans kidney beans (drained)
1 tsp. cumin
1 tsp. garlic powder
2 or more tbsp. chili powder (or more to taste)
Salt and pepper to taste.
Cooking Instructions:

Cook and stir onion in oil in large skillet until transparent

Add beef and cook until beef is done

Drain beef and onions and set aside

Add beef and onion mixture and add the rest of the ingredients to a large kettle or crock pot

Simmer over low heat for 45 minutes to an hour. In crock pot: you can let simmer for up to 7 more hours.

Top with cheese and chopped onions and serve with cornbread, tortillas or chips.
